A popular snack made by filling pastry shells with spiced potatoes, peas, or meat and deep-frying them. Here's a recipe for Samosas:
Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3 tablespoons vegetable oil
- 1/2 cup water
For the Filling:
- 2 medium potatoes, peeled and chopped into small pieces
- 1/2 cup green peas
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds, crushed
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
- Oil for deep-frying
Instructions:
- To make the dough, combine the flour and salt in a mixing bowl. Add the oil and mix until it resembles breadcrumbs.
- Add water a little at a time, kneading the dough until it comes together into a smooth, firm ball.
- Cover the dough with a damp cloth and set aside for at least 30 minutes.
- To make the filling, heat oil in a pan over medium heat. Add cumin seeds and coriander seeds, and fry until fragrant.
- Add chopped potatoes, green peas, garam masala powder, red chili powder, and salt to taste. Mix well, cover, and cook until the potatoes are tender, stirring occasionally.
- Once cooked, add chopped fresh coriander leaves and mix well. Remove from heat and let it cool down.
- To assemble the samosas, roll out the dough into a thin, large sheet and cut it into strips.
- Take one strip and fold it into a triangular shape. Fill the triangle with 1-2 tablespoons of the filling mixture.
- Fold the triangle over to form another triangle, and continue folding until you reach the end of the strip.
- Seal the end of the strip with a little water to ensure the samosa doesn't open during frying.
- Heat oil in a deep frying pan over medium heat. Add the samosas in batches and fry until golden brown and crispy, turning occasionally.
- Once cooked, remove the samosas from the frying pan and place them on paper towels to remove excess oil.
- Serve hot with chutney or ketchup.
